About your instructor Kriss-Abigail Paredes has worked year-round as a professional wild game butcher for the past decade and manages the Wild Game Division at Alamo Meat Market and Provisions in Comfort, Texas. She has taught wild game butchery for the Texas Wildlife Association, Texas Parks and Wildlife, Operation Orphans, and private hunt camps, and this marks her third workshop at Casa Venado. Named "The New American Butcher" by Modern Huntsman, her work has been featured in numerous publications.
